Crockpot Chili Cheese Potato Skillet

4 medium russet potatoes, diced

1 lb ground beef (or turkey for a lighter option)

1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) kidney beans, rinsed and drained

1 can (10 oz) diced tomatoes with green chilies

1 cup frozen corn

1 packet (1 oz) chili seasoning mix

1 cup beef or vegetable broth

1 cup shredded cheddar cheese (plus more for topping)

1 small onion, diced

2 cloves garlic, minced

1 tablespoon olive oil

Salt and pepper to taste

Fresh cilantro or green onions for garnish (optional)

Instructions
 

Preparation: In a skillet over medium heat, add olive oil. Once the oil is hot, add the diced onions and minced garlic. Sauté for about 2-3 minutes until fragrant and the onions are translucent.

    Cook Ground Meat: Add the ground beef (or turkey) to the skillet. Season with salt and pepper. Break the meat apart with a spatula and cook until browned, about 5-7 minutes. Drain excess fat if necessary.

      Transfer to Crockpot: Once the meat is cooked, transfer it to the crockpot. Add the diced potatoes, black beans, kidney beans, diced tomatoes with green chilies, frozen corn, chili seasoning mix, and broth. Stir well to combine all the ingredients.

        Cook on Low: Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours. The potatoes should be tender and the flavors melded together beautifully.
