Crockpot Creamy Chicken Chili

2 lbs boneless, skinless chicken breasts

1 can (15 oz) white beans, drained and rinsed (such as cannellini or great northern)

1 can (15 oz) corn kernels, drained

1 can (10 oz) diced tomatoes with green chilies (like Rotel)

1 medium onion, diced

3 cloves garlic, minced

1 cup chicken broth

1 packet (1 oz) taco seasoning

1 teaspoon cumin

1 teaspoon paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

8 oz cream cheese, cubed

1/2 cup heavy cream

Fresh cilantro, for garnish

Optional: sliced jalapeños, shredded cheese, and avocado for topping

Instructions
 

Prepare the Chicken: Place the boneless chicken breasts at the bottom of your crockpot. They form the base of the chili.

    Add Vegetables and Beans: Layer in the diced onion, minced garlic, white beans, corn, and diced tomatoes with green chilies.

      Season the Mixture: Sprinkle the taco seasoning, cumin, paprika, salt, and pepper evenly over the top of the ingredients in the crockpot.

        Pour in the Broth: Gently pour the chicken broth over the layered ingredients to help them cook evenly.

          Cook the Chili: Cover the crockpot with its lid and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is thoroughly cooked and easily shreds with a fork.

            Shred the Chicken: Once cooked, remove the chicken breasts from the crockpot and shred them using two forks. Return the shredded chicken back into the pot.

              Add Creamy Elements: Cube the cream cheese and stir it into the chili until melted. Add the heavy cream and mix well, allowing the chili to become creamy and luscious.

                Taste and Adjust: Give the chili a taste and adjust the seasoning if necessary. If you'd like more heat, feel free to add hot sauce or more spices according to your preference.
