Crockpot Pierogi Casserole with Kielbasa

12 oz frozen potato and cheese pierogi

1 pound kielbasa, sliced

1 medium onion, diced

2 cloves garlic, minced

2 cups sauerkraut, drained and rinsed

1 can (10.5 oz) cream of mushroom soup

1 cup sour cream

1 cup shredded cheddar cheese

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Layer the Ingredients: In the bottom of the crockpot, layer half of the frozen pierogi. Next, add half of the sliced kielbasa, half of the diced onion, half of the minced garlic, and half of the sauerkraut. Season this layer with salt, pepper, garlic powder, and onion powder.

    Add Creamy Mixture: In a medium bowl, mix together the cream of mushroom soup and sour cream until well blended. Spoon half of this creamy mixture over the layered ingredients in the crockpot.

      Repeat the Layers: Repeat the layers with the remaining pierogi, kielbasa, onion, garlic, and sauerkraut. Top with the rest of the creamy mixture.

        Cook: Cover the crockpot and cook on low for 4-6 hours, or until the pierogi are tender and the kielbasa is heated through.

          Add Cheese: About 15 minutes before serving, sprinkle the shredded cheddar cheese on top of the casserole. Cover again and let it melt into a gooey topping.

            Serve: Once everything is cooked through and the cheese is melted, serve hot. Garnish with chopped fresh parsley for a burst of color and flavor.
