1 package (16 oz) frozen pierogi (potato and cheese or your favorite variety)

1 lb kielbasa, sliced into rounds

1 medium onion, diced

2 cloves garlic, minced

2 cups shredded cheddar cheese

1 can (15 oz) diced tomatoes, drained

1 cup sour cream

1 cup chicken broth

1 teaspoon smoked paprika

1 teaspoon dried thyme

Salt and pepper to taste

Chopped fresh parsley for garnish (optional)

Instructions
 

Prep the Ingredients: Begin by slicing the kielbasa, dicing the onion, and mincing the garlic.

    Layer the Casserole: In the bottom of your crockpot, layer half of the frozen pierogi, add half of the kielbasa, and sprinkle half of the diced onion and garlic.

      Add Cheese and Spices: Sprinkle half of the shredded cheddar cheese on top, followed by a light seasoning of smoked paprika, thyme, salt, and pepper.

        Repeat Layers: Repeat the layers with the remaining pierogi, kielbasa, onion, garlic, and top with the remaining cheddar cheese.

          Prepare the Sauce: In a separate bowl, mix the drained diced tomatoes, sour cream, and chicken broth until well combined. Pour this mixture over the layered ingredients in the crockpot, ensuring it covers everything evenly.

            Cook the Casserole: Cover the crockpot with the lid and cook on low for 6-8 hours or high for 3-4 hours, until the pierogi are tender and everything is heated through.

              Serve: Once cooked, gently stir the casserole to combine everything. Taste and adjust seasoning if needed. Serve warm, garnished with chopped fresh parsley if desired.
