Ingredients

1 pound ground beef (or turkey for a lighter option)

1 onion, chopped

2 cloves garlic, minced

1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) kidney beans, rinsed and drained

1 can (28 oz) crushed tomatoes

1 can (6 oz) tomato paste

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

1 teaspoon dried oregano

Salt and pepper to taste

8 oz spaghetti, broken in half

2 cups shredded cheddar cheese

Fresh cilantro or parsley for garnish (optional)

Instructions

Prepare the Meat: In a skillet over medium heat, add the ground beef or turkey. Cook until browned and no longer pink. Drain excess fat, if necessary.

Sauté Aromatics: Add chopped onion and minced garlic to the skillet. Sauté until the onion becomes translucent, about 3-5 minutes.

Combine Ingredients: In your crockpot, combine the browned meat mixture, black beans, kidney beans, crushed tomatoes, tomato paste, chili powder, cumin, smoked paprika, oregano, salt, and pepper. Stir until well mixed.

Add Spaghetti: Gently fold in the broken spaghetti, ensuring it’s submerged in the sauce but not overlapped too much.

Cook on Low: Cover your crockpot and cook on low for 4-5 hours or high for 2-3 hours, until the spaghetti is tender.

Add Cheese Topping: About 15 minutes before serving, sprinkle the shredded cheddar cheese over the top, cover, and let it melt.

Serve: Once the cheese is melted and bubbly, stir gently to mix in the cheese. Garnish with fresh cilantro or parsley, if desired. Serve hot and enjoy your hearty meal!
