Ingredients
  

1 cup all-purpose flour

1/4 cup powdered sugar

1/2 cup unsalted butter, cold and cubed

1/4 teaspoon salt

2-3 tablespoons ice water

1 cup granulated sugar

1/2 cup fresh lemon juice (about 2-3 lemons)

Zest of 2 lemons

3 large eggs

1/2 cup unsalted butter, cut into pieces

Fresh berries and mint leaves for garnish

Instructions
 

Make the Tart Shells:

    a. In a large mixing bowl, combine the flour, powdered sugar, and salt.

      b. Add the cold butter and mix until the mixture resembles coarse crumbs.

        c. Gradually add ice water and mix until the dough comes together.

          d. Wrap the dough in plastic wrap and chill in the refrigerator for at least 30 minutes.

            Preheat the Oven:

              Preheat your oven to 350°F (175°C).

                Roll Out and Cut Dough:

                  a. On a floured surface, roll out the chilled dough to about 1/4 inch thickness.

                    b. Cut out circles that fit into your mini tart pans (about 3 inches in diameter).

                      Bake the Tart Shells:

                        a. Press the dough circles into the tart pans and prick the bottoms with a fork.

                          b. Bake for 12-15 minutes or until lightly golden. Remove from the oven and let cool.

                            Prepare the Lemon Curd:

                              a. In a medium saucepan, whisk together granulated sugar, lemon juice, lemon zest, and eggs over medium heat until combined.

                                b. Cook while whisking continuously until the mixture thickens, about 8-10 minutes.

                                  c. Remove the saucepan from heat and stir in the butter until melted and smooth.

                                    Fill the Tart Shells:

                                      Spoon the lemon curd into the cooled tart shells, filling them generously.

                                        Chill the Tarts:

                                          Refrigerate the tarts for at least 1 hour to set the lemon curd.

                                            Serve and Garnish:
