Ingredients

1 cup dark chocolate chips (70% cocoa or higher)

1/2 cup almond butter (smooth and unsweetened)

2 tablespoons maple syrup (or honey for non-vegan)

1 teaspoon vanilla extract

1/4 teaspoon sea salt

1/4 cup crushed almonds (for topping, optional)

Mini cupcake liners

Instructions

Melt the Chocolate: In a microwave-safe bowl, combine the dark chocolate chips. Microwave in 30-second intervals, stirring between each, until fully melted and smooth. Be careful not to overheat.

Prepare the Molds: Place mini cupcake liners in a mini muffin tin. This will help easily remove the cups later.

First Layer of Chocolate: Using a spoon, add about 1 tablespoon of melted chocolate into the bottom of each muffin liner. Gently spread the chocolate up the sides a bit. Use a brush or the back of the spoon to create an even layer. Place the muffin tin in the freezer for about 10 minutes to set.

Make the Almond Butter Filling: In a medium bowl, mix the almond butter, maple syrup, vanilla extract, and sea salt until well combined. This will create a deliciously smooth and slightly sweet filling.

Add Almond Butter Filling: Once the chocolate base is set, take the muffin tin out of the freezer. Add about 1 teaspoon of the almond butter mixture on top of the hardened chocolate layer in each cup, smoothing it out gently.

Top with More Chocolate: Pour another tablespoon of melted chocolate over the almond butter filling in each cup, ensuring that the filling is fully covered. Optional: sprinkle crushed almonds on top for added texture and crunch.

Final Set: Return the muffin tin to the freezer for another 20 minutes, or until the chocolate is completely set.

Serve and Enjoy: Once fully set, gently remove the almond butter cups from the liners. Store them in an airtight container in the refrigerator for up to 2 weeks. Enjoy your homemade dark chocolate almond butter cups!
