8 oz (225g) semi-sweet chocolate, chopped

3 tablespoons unsalted butter

4 large eggs, separated

1/4 cup granulated sugar

1 teaspoon vanilla extract

1 pinch of salt

1/2 cup heavy whipping cream

Whipped cream and chocolate shavings for garnish (optional)

Instructions
 

Melt Chocolate: In a heatproof bowl, combine the chopped semi-sweet chocolate and unsalted butter. Set the bowl over a pot of simmering water (double boiler method) and stir until melted and smooth. Remove from heat and let cool slightly.

    Prepare Egg Yolks: In a medium bowl, whisk together the egg yolks, granulated sugar, and vanilla extract until the mixture is pale and slightly thickened. Stir in the melted chocolate mixture until well combined.

      Whip Egg Whites: In another clean bowl, using an electric mixer, beat the egg whites with a pinch of salt until soft peaks form. Gradually add a tablespoon of sugar and continue beating until stiff peaks form.

        Fold in Egg Whites: Gently fold one-third of the whipped egg whites into the chocolate mixture to lighten it. Then carefully fold in the remaining egg whites until no streaks remain.

          Whip Cream: In a separate bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the chocolate mixture until combined but still fluffy.

            Chill: Spoon the chocolate mousse into individual serving cups or glasses. Cover with plastic wrap and refrigerate for at least 2 hours, or until set.

              Serve: Before serving, top the mousse cups with a dollop of whipped cream and sprinkle with chocolate shavings, if desired.
