12 lasagna noodles, broken into pieces

1 tablespoon olive oil

1 medium onion, diced

3 cloves garlic, minced

1 pound ground Italian sausage (or ground turkey)

4 cups chicken broth

1 cup heavy cream

1 cup Alfredo sauce (store-bought or homemade)

1 can (14.5 oz) diced tomatoes, with juices

1 teaspoon Italian seasoning

Salt and pepper to taste

2 cups fresh spinach leaves

1 ½ cups ricotta cheese

1 cup shredded mozzarella cheese

¼ cup grated Parmesan cheese

Fresh basil for garnish

Instructions
 

Cook the Noodles: In a large pot, bring salted water to a boil. Add the broken lasagna noodles and cook until al dente according to package instructions. Drain and set aside.

    Sauté Vegetables: In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent. Add minced garlic and cook for another 1 minute until fragrant.

      Brown the Sausage: Add the ground Italian sausage to the skillet, breaking it up with a spatula. Cook until browned and cooked through, about 5-6 minutes. Drain any excess fat.

        Combine Broth and Cream: In the large pot (or a fresh pot if necessary), combine the chicken broth, heavy cream, and Alfredo sauce. Bring to a gentle simmer over medium heat.

          Add Remaining Ingredients: Stir in the diced tomatoes (with juices), cooked sausage mixture, Italian seasoning, and the cooked lasagna noodles. Season with salt and pepper to taste. Simmer uncovered for about 10 minutes, allowing the flavors to meld.
