Ingredients

4 salmon fillets, skin removed (about 6 oz each)

1 cup crab meat, picked over for shells

1 cup shrimp, peeled, deveined, and chopped

1/2 cup cream cheese, softened

1/4 cup mayonnaise

1 tablespoon Dijon mustard

1 tablespoon lemon juice

2 tablespoons fresh chives, finely chopped

2 tablespoons fresh parsley, chopped

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper to taste

1 cup breadcrumbs (preferably panko for extra crunch)

2 tablespoons olive oil

Lemon wedges for serving

Instructions

Preheat Oven: Preheat your oven to 375°F (190°C).

Prepare the Filling: In a large mixing bowl, combine the crab meat, chopped shrimp, cream cheese, mayonnaise, Dijon mustard, lemon juice, chives, parsley, garlic powder, paprika, salt, and pepper. Mix until well combined.

Prepare Salmon: Lay the salmon fillets on a clean cutting board. Using a sharp knife, cut a pocket in the side of each fillet, being careful not to cut completely through. The pocket should be deep enough to hold a generous amount of filling.

Stuff the Salmon: Spoon the crab and shrimp filling into each salmon pocket, pressing gently to ensure it’s packed in.

Coat the Salmon: In a shallow dish, mix the breadcrumbs with olive oil, salt, and pepper. Dip each stuffed salmon fillet in the breadcrumb mixture, ensuring they are evenly coated.

Bake the Salmon: Arrange the fillets on a greased baking sheet or a parchment-lined dish. Bake in the preheated oven for 20-25 minutes or until the salmon is cooked through and the breadcrumbs are golden.

Serve: Let the salmon rest for a few minutes before serving. Plate with lemon wedges on the side for squeezing over the top for a bright finish.
