Ingredients

1 pound ground chicken

1 tablespoon olive oil

1 small onion, diced

2 cloves garlic, minced

1 red bell pepper, diced

2 tablespoons Cajun seasoning

1 cup diced tomatoes (canned or fresh)

1 tablespoon tomato paste

1 tablespoon Worcestershire sauce

1 tablespoon brown sugar

Salt and pepper to taste

4 hamburger buns

Fresh parsley, chopped (for garnish)

Optional: sliced pickles and hot sauce for topping

Instructions

Cook Chicken: In a large skillet, heat olive oil over medium heat. Add the ground chicken and cook until browned, breaking it up with a wooden spoon, about 5-7 minutes.

Sauté Vegetables: Add the diced onion, minced garlic, and red bell pepper to the skillet. Cook for an additional 3-4 minutes until the vegetables are soft and fragrant.

Season Meat: Stir in the Cajun seasoning, ensuring it coats the chicken and vegetables evenly. Cook for another minute to enhance the flavors.

Add Tomatoes: Pour in the diced tomatoes, along with the tomato paste, Worcestershire sauce, and brown sugar. Stir well to combine.

Simmer Mixture: Reduce the heat to low and let the mixture simmer for about 10-15 minutes until it thickens slightly. Stir occasionally and season with salt and pepper to taste.

Prepare Buns: While the mixture is simmering, lightly toast the hamburger buns.

Assemble Sloppy Joes: Spoon the Cajun chicken mixture generously onto the bottom half of each toasted bun.

Add Toppings: If desired, add sliced pickles and a dash of hot sauce before placing the top bun over the filling.

Serve: Garnish with fresh parsley and serve the Cajun Chicken Sloppy Joes hot, with your favorite side dishes like coleslaw or sweet potato fries.
