1 lb Italian sausage (mild or spicy, based on preference)

1 medium onion, diced

3 cloves garlic, minced

3 medium carrots, diced

2 celery stalks, diced

4 cups chicken broth

1 can (14 oz) diced tomatoes (with Italian herbs)

1 cup heavy cream

1 cup grated Parmesan cheese

2 cups fresh spinach, chopped

1 tsp dried oregano

1 tsp dried basil

Salt and pepper to taste

Olive oil (for sautéing)

Crusty bread (for serving)

Instructions
 

Cook the Sausage: In a large pot over medium heat, add a splash of olive oil. Crumble the Italian sausage into the pot and cook until browned. Remove and set aside, leaving the drippings in the pot.

    Sauté the Vegetables: In the same pot, add the diced onion, carrots, and celery. Sauté for about 5-7 minutes until the vegetables are soft. Add the minced garlic and cook for an additional minute until fragrant.

      Add the Broth and Tomatoes: Pour in the chicken broth and add the canned diced tomatoes (including juices). Stir to combine.

        Season the Soup: Add the cooked sausage back into the pot. Then, mix in the dried oregano, dried basil, salt, and pepper. Bring the mixture to a boil, then reduce the heat and let it simmer for about 15 minutes.

          Incorporate Cream and Spinach: Lower the heat and stir in the heavy cream and grated Parmesan cheese, allowing it to melt and combine. Add the fresh spinach and let it wilt for about 2-3 minutes.

            Taste and Adjust: Taste the soup and adjust seasoning, adding more salt or pepper if necessary.

              Serve: Ladle the soup into bowls, and if desired, sprinkle additional Parmesan cheese on top. Pair with crusty bread for dipping.
