1 cup glutinous rice flour (mochi flour)

1/4 cup sugar

1/2 cup water

1 teaspoon vanilla extract

Cornstarch (for dusting)

8 ripe strawberries, hulled

1/4 cup sweetened red bean paste (optional, for stuffing)

Prepare the Strawberries: If using red bean paste, gently flatten each strawberry and wrap a thin layer around it, creating a small ball. Set aside.

    Make the Mochi Dough: In a microwave-safe bowl, combine glutinous rice flour, sugar, and water. Stir until smooth.

      Cook the Dough: Microwave the mixture for 1 minute, then stir. Microwave for another minute, stir again, and then a final 30 seconds. The dough should become thick and sticky.

        Cool the Dough: Dust your work surface generously with cornstarch. Transfer the hot mochi dough to the surface and let it cool for a few minutes until it's manageable.

          Shape the Mochi: Dust your hands with cornstarch, take a small piece of mochi dough (about the size of a golf ball), and flatten it into a circle. If desired, place a stuffed strawberry in the center and wrap the mochi around it, pinching to seal. Repeat for all strawberries.

            Dust and Set: Dust the finished mochi with cornstarch to prevent sticking, and place them on a plate or tray. Let them rest for about 30 minutes to firm up.
