2 ½ cups all-purpose flour

1 cup unsalted butter, chilled and diced

1 tsp salt

1 tbsp sugar

6-8 tbsp ice water

For the Apple Filling:

6 cups tart apples (like Granny Smith), peeled, cored, and sliced

¾ cup granulated sugar

1 tsp cinnamon

¼ tsp nutmeg

2 tbsp lemon juice

2 tbsp all-purpose flour (for thickening)

1 tbsp unsalted butter, cut into small pieces (for dotting)

For the Egg Wash:

1 egg, beaten

1 tbsp milk

Prepare the Pie Crust:

    - In a large mixing bowl, combine flour, salt, and sugar. Add the diced chilled butter and mix until the mixture resembles coarse crumbs.

      - Gradually add the ice water, one tablespoon at a time, mixing until the dough comes together.

        - Divide the dough into two halves, form them into disks, wrap in cling film, and refrigerate for at least 1 hour.

          Make the Apple Filling:

            - In a large bowl, toss the sliced apples with sugar, cinnamon, nutmeg, lemon juice, and flour until well combined. Set aside to allow the flavors to meld and the apples to release their juices.

              Preheat the Oven:

                - Preheat your oven to 425°F (220°C).

                  Roll Out the Dough:

                    - On a lightly floured surface, roll out one disk of dough into a rectangle large enough to fit a 15x10-inch baking sheet. Transfer to the baking sheet, pressing the dough into the corners.

                      Fill the Pie:

                        - Pour the prepared apple filling over the rolled-out dough, spreading it evenly. Dot the filling with small pieces of butter.

                          Add the Second Layer:
