2 lbs Yukon gold potatoes, peeled and diced

1 cup heavy cream

1 cup grated Gruyère cheese

1 cup grated Parmesan cheese

4 tablespoons unsalted butter, divided

1 medium onion, finely chopped

2 cloves garlic, minced

1/2 teaspoon smoked paprika

Salt and black pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 375°F (190°C). Grease a 9x13 inch baking dish with 1 tablespoon of butter.

    Place the diced potatoes in a large pot and cover them with cold salted water. Bring to a boil, then reduce to a simmer. Cook until tender, about 15 minutes. Drain and set aside.

      In a large skillet, melt 2 tablespoons of butter over medium heat. Add the chopped onion and cook until translucent, about 5 minutes. Stir in minced garlic and cook for an additional 1 minute until fragrant.

        In a mixing bowl, combine the heavy cream, Gruyère cheese, half of the Parmesan cheese, smoked paprika, salt, and black pepper.

          Add the cooked potatoes to the skillet with the onions and garlic, gently mixing. Pour the cream and cheese mixture over the potatoes and mix until well combined.

            Transfer the potato mixture into the greased baking dish. Sprinkle the remaining Parmesan cheese on top and dot with the remaining 1 tablespoon of butter.

              Bake in the preheated oven for 25-30 minutes or until golden brown and bubbly.

                Once done, remove from the oven and let it rest for a few minutes. Garnish with freshly chopped parsley before serving.
