4 large russet potatoes, peeled and diced

1 cup heavy cream

1 cup shredded sharp cheddar cheese

1/2 cup sour cream

1/4 cup unsalted butter, melted

1/2 cup diced onions

2 cloves garlic, minced

1/2 teaspoon paprika

Salt and pepper to taste

1/4 cup fresh chives, chopped (for garnish)

Instructions
 

Boil the Potatoes: In a large pot, bring salted water to a boil. Add the diced potatoes and cook until they are tender but not mushy, about 10-15 minutes. Drain and set aside.

    Sauté the Onions and Garlic: In a skillet, melt 1 tablespoon of butter over medium heat. Add the diced onions and sauté until translucent, about 5 minutes. Add the minced garlic and cook for another minute until fragrant. Remove from heat.

      Prepare the Cream Mixture: In a large mixing bowl, combine the heavy cream, sour cream, melted butter, paprika, salt, and pepper. Mix well until smooth.

        Combine Ingredients: In the mixing bowl with the cream mixture, add the drained potatoes, sautéed onions, and garlic. Gently fold in the shredded cheddar cheese, ensuring that the potatoes are well-coated.

          Transfer to Baking Dish: Preheat your oven to 375°F (190°C). Pour the potato mixture into a greased 9x13 inch baking dish, spreading it evenly.

            Bake: Cover the dish with aluminum foil and bake for 30 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the potatoes are golden and the edges are bubbling.

              Garnish and Serve: Once baked, remove from the oven and allow to cool for a few minutes. Sprinkle with fresh chives before serving.
