Ingredients
  

8 oz elbow macaroni

4 large eggs, hard-boiled and chopped

1/2 cup mayonnaise

1 tbsp Dijon mustard

1 tbsp apple cider vinegar

1 tsp smoked paprika

1/4 cup finely chopped red onion

1/4 cup sweet pickle relish

Salt and pepper to taste

2 green onions, sliced for garnish

Optional: 1/4 cup chopped celery for crunch

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the elbow macaroni according to package instructions until al dente. Drain and rinse under cold water to cool it down. Set aside.

    Prepare the Dressing: In a bowl, combine the mayonnaise, Dijon mustard, apple cider vinegar, and smoked paprika. Mix until smooth and creamy.

      Combine Ingredients: In a large mixing bowl, add the cooled pasta, chopped hard-boiled eggs, red onion, sweet pickle relish, and chopped celery (if using).

        Mix Everything: Pour the dressing over the pasta mixture. Gently fold to combine all the ingredients until evenly coated in the dressing.

          Season: Taste the salad and season with salt and pepper according to your preference.

            Chill: Cover the pasta salad with plastic wrap or transfer it to an airtight container. Let it chill in the refrigerator for at least 1 hour to allow the flavors to meld.

              Serve: Before serving, give the salad a quick stir. Garnish with sliced green onions for an added touch and extra flavor.
