Ingredients

2 large cucumbers, thinly sliced

1/4 red onion, thinly sliced

1 carrot, julienned

2 tablespoons rice vinegar

1 tablespoon soy sauce

1 tablespoon sesame oil

1 teaspoon sugar

1 teaspoon salt

1/2 teaspoon crushed red pepper flakes (adjust to taste)

1 tablespoon sesame seeds, toasted

2 green onions, chopped

Instructions

Prepare the Vegetables: In a large bowl, combine the sliced cucumbers, red onion, and julienned carrot. Toss them gently to mix.

Make the Dressing: In a separate bowl, whisk together the rice vinegar, soy sauce, sesame oil, sugar, salt, and crushed red pepper flakes until the sugar dissolves.

Combine: Pour the dressing over the cucumber mixture and toss to coat all the vegetables evenly.

Chill: Let the salad sit for about 10-15 minutes at room temperature to allow the flavors to meld. For a cooler option, refrigerate for 30 minutes.

Garnish and Serve: Just before serving, sprinkle the toasted sesame seeds and chopped green onions over the salad, giving it one final toss. Enjoy your refreshing dish!
