Ingredients
  

1 pound salmon fillets, skinless and boneless

1/2 cup panko breadcrumbs

1/4 cup all-purpose flour

2 large eggs

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper to taste

1/2 cup mayonnaise

3 tablespoons sweet chili sauce

1 tablespoon sriracha (adjust for spice preference)

1 tablespoon lime juice

Chopped green onions and sesame seeds for garnish

Instructions
 

Prepare the Salmon: Cut the salmon fillets into bite-sized cubes (about 1-inch pieces). Set aside.

    Set Up Breading Station: In a shallow bowl, combine flour, garlic powder, paprika, salt, and pepper. In a second bowl, beat the eggs. In a third bowl, place the panko breadcrumbs.

      Bread the Salmon: Dredge each salmon cube in the flour mixture, then dip into the beaten eggs, and finally coat with panko breadcrumbs. Ensure each piece is well-coated.

        Cook the Salmon Bites: Heat a large skillet over medium heat and add a few tablespoons of oil. When the oil is hot, add the salmon bites in batches (avoid overcrowding) and cook for about 3-4 minutes on each side, or until golden brown and crispy. Remove from skillet and place on a paper towel-lined plate to drain excess oil.
