1 ½ cups all-purpose flour

½ cup granulated sugar

2 tsp baking powder

½ tsp baking soda

½ tsp salt

1 large lemon (zest and juice)

1/3 cup vegetable oil

1 large egg

½ cup buttermilk (or milk with 1 tsp vinegar)

1 cup fresh blueberries

1 tsp vanilla extract

2 tbsp coarse sugar (for topping, optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or grease it lightly.

    Combine Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.

      Mix Wet Ingredients: In a separate bowl, combine the lemon zest, lemon juice, vegetable oil, egg, buttermilk, and vanilla extract. Whisk until smooth.

        Combine Mixtures: Make a well in the center of the dry ingredients and pour in the wet ingredients. Stir gently with a spatula until just combined. Be careful not to overmix; some lumps are okay.

          Add Blueberries: Gently fold in the blueberries until evenly distributed in the batter.

            Fill Muffin Tin: Spoon the batter into the prepared muffin tin, filling each cup about ¾ full. If desired, sprinkle a little coarse sugar on top for extra crunch.

              Bake: Bake in the preheated oven for 18-22 minutes or until the muffins are golden brown and a toothpick inserted into the center comes out clean.
