4 large flour tortillas

1 cup shredded cheese (cheddar, Monterey Jack, or a blend)

4 large eggs

1/2 cup diced bell peppers (red, green, or yellow)

1/4 cup diced onion

1/2 cup cooked and crumbled sausage or diced ham (optional)

1/4 cup fresh cilantro, chopped (optional)

Salt and pepper to taste

2 tablespoons olive oil or butter

Salsa and sour cream for serving (optional)

Instructions
 

Prep the Filling: In a medium bowl, whisk the eggs and season with salt and pepper. Stir in the diced bell peppers, onions, and cooked sausage or ham if using.

    Cook the Eggs: Heat 1 tablespoon of olive oil or butter in a skillet over medium heat. Pour in the egg mixture and cook, stirring occasionally, until the eggs are just set but still slightly soft, about 3-4 minutes. Remove from heat.

      Assemble Quesadillas: On one half of each flour tortilla, sprinkle some shredded cheese, then add an even layer of the scrambled egg mixture and top with a little more cheese. Fold the tortilla in half to create a half-moon shape.

        Cook Quesadillas: In the same skillet (you can add a bit more oil or butter if necessary), place the folded quesadilla seam-side down. Cook for about 2-3 minutes on each side, or until golden brown and the cheese is melted.

          Repeat Cooking: Repeat the process with the remaining tortillas, adding more oil or butter as needed.

            Slice and Serve: Remove the quesadillas from the skillet, allow them to cool slightly, then slice into wedges. Serve warm with salsa and sour cream on the side, and sprinkle with cilantro if desired.
