12 small buttery brioche slider buns

8 large eggs

1 cup shredded cheddar cheese

1 cup cooked and crumbled breakfast sausage (or bacon)

1/2 cup milk

1 tablespoon olive oil

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon Dijon mustard

2 tablespoons finely chopped green onions (optional)

4 tablespoons unsalted butter (melted)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Slider Buns: Slice the brioche slider buns in half horizontally, keeping the top and bottom halves intact. Arrange the bottom halves in a greased 9x13 inch baking dish.

      Cook the Sausage (or Bacon): In a skillet over medium heat, add the olive oil. Cook the breakfast sausage (or bacon) until browned and cooked through. Remove from the heat and scatter the crumbled sausage on top of the bottom halves of the slider buns.

        Make the Egg Mixture: In a large mixing bowl, whisk together the eggs, milk, salt, pepper, Dijon mustard, and green onions until fully combined.

          Add the Cheese: Stir in the shredded cheddar cheese into the egg mixture.

            Pour Egg Mixture: Carefully pour the egg and cheese mixture over the sausage on the slider buns, ensuring it spreads evenly.

              Top with Bun Halves: Place the top halves of the slider buns over the egg mixture, pressing down gently.

                Butter the Buns: Brush the melted butter on top of the buns for extra flavor and a golden finish.

                  Bake: Cover the baking dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the sliders are golden brown and the eggs are set.
