Easy Chicken and Rice Casserole

2 cups uncooked long-grain white rice

4 cups low-sodium chicken broth

1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

1 medium onion, finely chopped

2 cloves garlic, minced

1 cup frozen mixed vegetables (peas, carrots, corn)

1 cup shredded cheddar cheese

1 tsp dried thyme

1 tsp paprika

1/2 tsp black pepper

1 tsp salt (or to taste)

2 tbsp olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 375°F (190°C).

    Sauté Onion and Garlic: In a large skillet over medium heat, add the olive oil. Once hot, add the chopped onion and sauté for about 3-4 minutes until translucent. Stir in the minced garlic and cook for another 1-2 minutes until fragrant.

      Cook Chicken: Add the bite-sized chicken pieces to the skillet. Sprinkle with dried thyme, paprika, black pepper, and salt. Cook until the chicken is browned and cooked through, about 5-7 minutes.

        Combine Ingredients: In a large mixing bowl, combine the uncooked rice, chicken broth, sautéed chicken mixture, frozen mixed vegetables, and half of the shredded cheddar cheese. Mix well until all ingredients are incorporated.

          Prepare for Baking: Transfer the mixture into a greased 9x13 inch (or similar-sized) baking dish, spreading it evenly. Top with the remaining cheddar cheese.

            Cover and Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. After 25 minutes, remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden, and the rice is tender.

              Let It Rest: Once done, remove from the oven and let the casserole rest for about 5 minutes before serving.

                Garnish and Serve: Sprinkle freshly chopped parsley on top for a touch of color and flavor. Serve warm and enjoy!
