Easy Chicken Avocado Melt Recipe

2 cups cooked chicken, shredded (rotisserie works great!)

1 ripe avocado, mashed

1 cup shredded cheese (cheddar or Monterey Jack)

1 tablespoon lime juice

1 teaspoon garlic powder

½ teaspoon onion powder

Salt and pepper to taste

4 slices of whole-grain or sourdough bread

4 tablespoons mayonnaise

1 teaspoon dried cilantro (optional)

1 tablespoon olive oil or butter (for grilling)

Prep the Chicken Mixture: In a mixing bowl, combine the shredded chicken, mashed avocado, lime juice, garlic powder, onion powder, salt, pepper, and dried cilantro (if using). Mix until well combined and creamy, adjusting salt and pepper to taste.

    Assemble the Melts: Spread 1 tablespoon of mayonnaise on one side of each slice of bread. On the non-mayo side, spread a generous amount of the chicken avocado mixture. Sprinkle shredded cheese evenly over the chicken avocado filling, and then close the sandwich with another slice of bread (mayo side out).

      Grill the Sandwiches: Heat olive oil or butter in a skillet over medium heat. Once hot, carefully place the sandwiches in the pan. Cook for about 4-5 minutes on each side, or until the bread is golden brown and the cheese is melted. If the cheese isn’t melting and the bread is browning too quickly, lower the heat to medium-low.

        Serve: Once grilled to perfection, remove the sandwiches from the pan. Let them cool for a minute, then slice in half and serve warm. Enjoy your Chicken Avocado Melt with a side salad or chips!
