Easy Chicken Enchiladas – Cheesy & Flavorful!

Ingredients
  

2 cups cooked chicken, shredded (rotisserie chicken works great!)

1 cup shredded cheese (cheddar or Monterey Jack)

1 can (10 oz) red enchilada sauce

1 can (15 oz) black beans, drained and rinsed

1 cup corn (frozen or canned)

1 teaspoon ground cumin

1 teaspoon garlic powder

½ teaspoon onion powder

Salt and pepper to taste

8 small flour or corn tortillas

½ cup chopped fresh cilantro (for garnish)

Sour cream (optional, for serving)

Sliced jalapeños (optional, for serving)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Filling: In a large mixing bowl, combine the shredded chicken, black beans, corn, half of the cheese (½ cup), ground cumin, garlic powder, onion powder, salt, and pepper. Mix well until all ingredients are evenly incorporated.

      Prepare the Tortillas: Lightly warm each tortilla in a skillet over medium heat for about 20-30 seconds per side or until slightly softened. This makes them pliable and easier to roll.

        Assemble the Enchiladas: Spread about 2 tablespoons of the chicken mixture down the center of each tortilla. Roll the tortilla tightly around the filling and place it seam-side down in a greased 9x13 inch baking dish.

          Top with Sauce: Once all tortillas are filled and placed in the dish, pour the enchilada sauce evenly over the top. Sprinkle the remaining cheese on top.

            Bake: Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes. Then, remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.

              Serve: Remove from the oven and let cool for a few minutes. Garnish with fresh cilantro. Serve with sour cream and sliced jalapeños if desired.
