2 cups cooked jasmine rice (preferably cold)

1 cup cooked chicken, diced (grilled or rotisserie works well)

2 tablespoons vegetable oil (divided)

2 large eggs, beaten

1 cup mixed vegetables (carrots, peas, and corn)

3 green onions, chopped

2-3 cloves garlic, minced

3 tablespoons soy sauce

1 tablespoon oyster sauce (optional)

Salt and pepper to taste

Sesame oil for drizzling (optional)

Instructions
 

Prepare the rice: If you do not have leftover rice, cook jasmine rice according to package instructions and let it cool in the refrigerator for a few hours or overnight for the best texture.

    Scramble the eggs: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium heat. Pour in the beaten eggs, scramble until fully cooked, and then transfer them to a plate. Set aside.

      Sauté the vegetables: In the same skillet, add the remaining tablespoon of oil. Once hot, add minced garlic and sauté for about 30 seconds until fragrant. Then, add the mixed vegetables and cook for 3-4 minutes until they're tender.

        Add the chicken and rice: Stir in the cooked chicken and cold rice, breaking up any clumps. Fry everything together for about 5 minutes, stirring frequently to ensure even cooking.

          Season and combine: Pour in the soy sauce and oyster sauce (if using), mixing everything well. Add the scrambled eggs back into the skillet along with chopped green onions. Stir everything together, cooking for another 2-3 minutes. Taste and season with salt and pepper as needed.

            Serve: Drizzle a little sesame oil over the fried rice for added flavor. Serve hot and enjoy!
