Ingredients
  

1 lb (450g) shredded cooked chicken (rotisserie chicken works great)

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn, drained

1 can (10 oz) diced tomatoes with green chilies

1 packet (1 oz) taco seasoning

4 cups (950 ml) chicken broth

1 small onion, diced

2 cloves garlic, minced

1 bell pepper, diced (any color)

1 tablespoon olive oil

Salt and pepper to taste

Optional toppings: sour cream, shredded cheese, diced avocado, chopped cilantro, tortilla chips

Instructions
 

In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and bell pepper. Sauté until the onion becomes translucent, about 5-7 minutes.

    Stir in the minced garlic and sauté for another minute until fragrant.

      Add the shredded chicken, black beans, corn, diced tomatoes with green chilies, taco seasoning, and chicken broth to the pot. Stir well to combine.

        Increase the heat to bring the soup to a gentle boil, then reduce the heat to low and let it simmer for about 20 minutes, stirring occasionally.

          Taste the soup and add salt and pepper as needed.

            Serve hot with your favorite toppings such as sour cream, shredded cheese, avocado, cilantro, and crushed tortilla chips.
