2 cups all-purpose flour

1 cup granulated sugar

1 tablespoon baking powder

1 teaspoon ground cinnamon

½ teaspoon salt

1 large egg

½ cup unsweetened applesauce

½ cup milk (whole or almond)

⅓ cup vegetable oil

1 teaspoon vanilla extract

1 medium apple, peeled, cored, and diced (preferably a tart variety like Granny Smith)

¼ cup brown sugar (for topping)

1 tablespoon cinnamon (for topping)

2 tablespoons melted butter (for topping)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners or lightly grease it with non-stick spray.

    Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, ground cinnamon, and salt until evenly combined.

      Combine Wet Ingredients: In another bowl, whisk together the egg, applesauce, milk, vegetable oil, and vanilla extract until smooth.

        Combine Mixtures: Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix! Gently fold in the diced apple.
