Ingredients
  

1 lb ground beef

1 medium onion, diced

2 cloves garlic, minced

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn, drained

1 can (10 oz) diced tomatoes with green chiles

1 packet taco seasoning

1 cup sour cream

1 cup shredded cheddar cheese

1 lb tater tots (frozen)

2 tablespoons olive oil

Salt and pepper to taste

Optional garnish: sliced green onions, jalapeños, or cilantro

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C).

    Cook the Meat: In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 2-3 minutes. Stir in the garlic and cook for an additional minute.

      Brown the Beef: Add the ground beef to the skillet, season with salt and pepper, and cook until browned and fully cooked. Drain any excess fat.

        Combine Ingredients: In the skillet with the beef, stir in the black beans, corn, diced tomatoes (with juices), and taco seasoning. Mix well and let simmer for 5 minutes.

          Layer in Casserole Dish: Pour the beef mixture into a greased 9x13 inch casserole dish. Spread the sour cream evenly over the top of the mixture, followed by the shredded cheddar cheese.

            Add Tater Tots: Arrange the frozen tater tots in a single layer on top of the cheese.

              Bake: Place the casserole in the preheated oven and bake for 30-35 minutes, until the tater tots are golden brown and crispy.

                Serve: Remove from oven and let cool for a few minutes. Garnish with optional toppings such as sliced green onions, jalapeños, or cilantro. Serve warm.
