2 pounds Yukon Gold potatoes, peeled and cubed

4 tablespoons unsalted butter, softened

1/2 cup heavy cream

2 large egg yolks

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

1/4 cup grated Parmesan cheese (optional)

Fresh chives or parsley, for garnish

Instructions
 

Cook the Potatoes: In a large pot, add the cubed Yukon Gold potatoes and cover them with cold water. Add a generous pinch of salt. Bring to a boil over medium-high heat and cook until the potatoes are fork-tender, about 15-20 minutes. Drain and return to the pot.

    Mash the Potatoes: Add the softened butter, heavy cream, garlic powder, onion powder, salt, pepper, and grated Parmesan cheese (if using) to the drained potatoes. Using a potato masher or a ricer, mash the potatoes until they are smooth and creamy.

      Incorporate Egg Yolks: Stir in the egg yolks until fully combined, ensuring the mixture is smooth and velvety. Taste and adjust the seasoning if necessary.

        Pipe the Potatoes: Preheat your oven to 400°F (200°C). Transfer the potato mixture to a piping bag fitted with a star tip. On a baking sheet lined with parchment paper, pipe the potatoes into decorative mounds or rosettes about 2 inches apart.

          Bake the Duchess Potatoes: Place the baking sheet in the preheated oven and bake for 20-25 minutes, or until the tops are golden brown.

            Garnish and Serve: Once baked, remove the duchess potatoes from the oven. Garnish with fresh chives or parsley and serve them warm as a delightful side dish.
