Ingredients

2 pounds Yukon Gold potatoes, peeled and cubed

1/2 cup unsalted butter, softened

1/2 cup heavy cream

2 large egg yolks

1 teaspoon garlic powder

1 teaspoon salt (adjust to taste)

1/2 teaspoon black pepper

1/4 teaspoon nutmeg (optional)

Fresh parsley, chopped (for garnish)

Instructions

Boil the Potatoes: In a large pot, add the peeled and cubed potatoes, cover with cold water, and add a pinch of salt. Bring to a boil over medium-high heat and cook until the potatoes are fork-tender, about 15-20 minutes. Drain well.

Mash the Potatoes: Return the drained potatoes to the pot. Use a potato masher or ricer to mash them until smooth and creamy. Remove any lumps to ensure a fine texture.

Incorporate the Ingredients: Add the softened butter, heavy cream, egg yolks, garlic powder, salt, black pepper, and nutmeg (if using) to the mashed potatoes. Blend until fully combined and creamy. Taste and adjust seasoning if necessary.

Pipe the Potatoes: Preheat your oven to 400°F (200°C). Transfer the potato mixture to a piping bag fitted with a large star tip. Pipe the potatoes onto a baking sheet lined with parchment paper in decorative swirls or mounds.

Bake to Perfection: Place the piped potatoes in the preheated oven and bake for about 20-25 minutes, or until the tops are golden brown and slightly crispy.

Garnish and Serve: Remove from the oven and garnish with chopped fresh parsley. Serve warm as a delightful side dish!
