Ingredients
  

2 cups cooked jasmine rice (preferably chilled)

3 large eggs

2 tablespoons soy sauce

1 tablespoon sesame oil

1 cup mixed vegetables (carrots, peas, and corn)

3 green onions, chopped

2 cloves garlic, minced

Salt and pepper to taste

Optional: 1 tablespoon sriracha for heat

Instructions
 

Prep the Rice: Make sure your cooked jasmine rice is chilled. If you have freshly cooked rice, spread it out on a plate for about 30 minutes to cool. This helps to prevent it from getting mushy when fried.

    Scramble the Eggs: In a large skillet or wok, heat 1 tablespoon of sesame oil over medium-high heat. Beat the eggs in a bowl with a pinch of salt and then pour them into the skillet. Stir continuously until the eggs are cooked through but still fluffy. Remove the eggs from the pan and set aside.

      Sauté Veggies: In the same skillet, add another tablespoon of sesame oil. Sauté the minced garlic for about 30 seconds until fragrant. Add the mixed vegetables and cook for about 3-4 minutes, or until they are tender but still colorful.

        Combine Ingredients: Add the chilled rice to the vegetable mixture and stir well to combine. Cook for about 2-3 minutes, allowing the rice to heat through.

          Add Soy Sauce & Eggs: Drizzle the soy sauce over the rice and continue to stir until the rice is evenly coated. Gently fold in the scrambled eggs and half of the chopped green onions. Adjust seasoning with salt and pepper to taste. If you like some heat, drizzle in the sriracha sauce and mix thoroughly.

            Serve & Garnish: Remove the skillet from heat and dish up the fried rice. Garnish with the remaining green onions. Enjoy your delicious and easy egg fried rice!
