1 pound flank steak

1 cup fresh spinach, chopped

1 red bell pepper, thinly sliced

½ cup feta cheese, crumbled

¼ cup sun-dried tomatoes, chopped

2 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon dried oregano

1 teaspoon salt

½ teaspoon black pepper

Prep the Steak: Begin by placing the flank steak between two pieces of plastic wrap. Pound the steak gently with a meat mallet or rolling pin until it's about ½ inch thick and even throughout.

    Season: Remove the plastic wrap and sprinkle both sides of the steak with salt, black pepper, and dried oregano for flavor.

      Create Filling: In a bowl, mix together the chopped spinach, sliced red bell pepper, crumbled feta cheese, sun-dried tomatoes, and minced garlic. Drizzle the olive oil over the mixture and toss to combine.

        Assemble Pinwheels: Spread the filling mixture evenly over the flank steak, leaving a small border around the edges. Carefully roll the steak up from one end to the other, forming a tight log.

          Secure the Roll: Use toothpicks or kitchen twine to secure the rolled steak, ensuring the filling stays inside.
