Ingredients

1 lb large shrimp, peeled and deveined

4 tablespoons unsalted butter, melted

4 cloves garlic, minced

1 teaspoon paprika

1 teaspoon dried parsley

1/2 teaspoon red pepper flakes (optional for heat)

Salt and pepper to taste

1 lemon, sliced

1 cup cherry tomatoes, halved

Fresh parsley, for garnish

Aluminum foil

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C). If you prefer, you can also prepare these packets on a grill.

Prepare the Foil: Cut four sheets of aluminum foil, about 12x12 inches in size. Fold each one in half to create a crease and then unfold it, this will help to contain your ingredients.

Mix the Sauce: In a small bowl, whisk together the melted butter, minced garlic, paprika, dried parsley, red pepper flakes, and a pinch of salt and pepper. This will be your aromatic sauce.

Assemble the Packets: On each foil sheet, place a serving of shrimp in the center. Drizzle about 1 tablespoon of the garlic butter mixture over the shrimp. Add a few cherry tomato halves and a couple of lemon slices on top.

Seal the Packets: Bring the two sides of the foil towards the center and fold them together. Then fold down the ends to seal the packet tightly, making sure there’s enough space for the steam to circulate inside.

Cook the Packets: Place the foil packets on a baking sheet and bake in the preheated oven for 12-15 minutes, or until the shrimp are pink and cooked through. If grilling, place on the grill for about 10-12 minutes.

Serve: Carefully open the foil packets (watch out for the steam!) and garnish with fresh parsley. Serve with additional lemon wedges on the side. Enjoy your flavorful meal!
