Ingredients

1 lb (450g) ground beef or turkey

1 medium onion, chopped

2 cloves garlic, minced

1 green bell pepper, diced

1 (14.5 oz) can diced tomatoes

2 cups beef broth

1 cup elbow macaroni

1 tablespoon Worcestershire sauce

2 teaspoons paprika

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper, to taste

1 cup shredded cheddar cheese (for topping)

Fresh parsley, chopped (for garnish)

Instructions

Sauté the Aromatics: In a large pot or Dutch oven, heat a drizzle of olive oil over medium heat. Add the chopped onion and bell pepper, sautéing for about 3-4 minutes until softened. Stir in the minced garlic and cook for another minute until fragrant.

Brown the Meat: Add the ground beef or turkey to the pot, breaking it up with a spoon. Cook until browned, about 5-7 minutes. Drain any excess fat if needed.

Combine Ingredients: Stir in the diced tomatoes (with their juice), beef broth, elbow macaroni, Worcestershire sauce, paprika, oregano, basil, salt, and pepper. Bring the mixture to a boil.

Simmer: Once boiling, reduce the heat to low. Cover the pot and let it simmer for about 15 minutes, or until the macaroni is cooked and the flavors are well combined, stirring occasionally.

Final Touches: Once the macaroni is tender, taste and adjust seasoning if necessary. Remove from heat and stir in half of the shredded cheddar cheese until melted and creamy.

Serve: Spoon the goulash into bowls and top with the remaining cheddar cheese. Garnish with fresh parsley for a pop of color.

Enjoy: Serve warm for a deliciously hearty meal!
