1 pound ground chicken

1/2 cup breadcrumbs (preferably whole wheat)

1/4 cup grated Parmesan cheese

1/4 cup fresh parsley, chopped

1 clove garlic, minced

1 teaspoon dried oregano

1/2 teaspoon salt

1/4 teaspoon black pepper

1 egg, beaten

Zest of 1 lemon

For the Lemon Orzo:

1 cup orzo pasta

2 cups chicken broth (or water)

Juice of 1 lemon

2 tablespoons olive oil

1 teaspoon dried thyme

Salt and pepper to taste

1/4 cup feta cheese, crumbled (for topping)

Fresh parsley, for garnish

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Make the Chicken Meatballs:

      - In a large mixing bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, parsley, garlic, oregano, salt, pepper, beaten egg, and lemon zest. Mix until everything is well combined.

        - Form the mixture into small meatballs, about 1 inch in diameter, and place them on the prepared baking sheet.

          Bake the Meatballs: Bake the chicken meatballs in the preheated oven for 20-25 minutes, or until they are cooked through and golden brown.

            Cook the Orzo:

              - In a medium saucepan, bring the chicken broth to a boil. Add the orzo and cook according to package instructions until al dente (usually about 8-10 minutes).

                - Once cooked, drain any excess liquid and return the orzo to the saucepan.

                  Finish the Orzo: Stir in the lemon juice, olive oil, thyme, salt, and pepper into the orzo. Mix well to combine and adjust seasoning to taste.

                    Serve: Plate the lemon orzo and top with the baked chicken meatballs. Sprinkle crumbled feta cheese and fresh parsley on top for an added touch.
