1 pound ground beef

4 medium potatoes, thinly sliced

1 medium onion, chopped

2 cloves garlic, minced

1 cup shredded cheese (cheddar or your choice)

1 can (10.5 oz) cream of mushroom soup

1/2 cup milk

1 teaspoon dried thyme

Salt and pepper to taste

1 tablespoon olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 350°F (175°C).

    In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, sautéing until translucent, about 3-4 minutes.

      Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned and cooked through. Season with thyme, salt, and pepper. Drain excess fat if necessary.

        In a separate bowl, combine the cream of mushroom soup and milk, stirring until smooth.

          In a 9x13 inch baking dish, layer half of the sliced potatoes at the bottom. Spread half of the cooked ground beef mixture over the potatoes, followed by half of the soup mixture. Repeat the layers, finishing with the soup mixture on top.

            Cover the dish with aluminum foil and bake for 45 minutes.

              Remove the foil, sprinkle shredded cheese on top, and return to the oven for an additional 15 minutes or until the cheese is bubbly and golden.

                Once done, remove from the oven and let it cool for a few minutes before garnishing with fresh parsley. Serve warm.
