Ingredients
  

1 pound ground beef

1 medium onion, chopped

2 cloves garlic, minced

4 cups potatoes, diced (about 4 medium)

1 can (10.5 oz) cream of mushroom soup

1 cup milk

1 cup shredded cheddar cheese

1 teaspoon paprika

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon dried thyme

1 cup frozen mixed vegetables (optional)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 375°F (190°C).

    In a large skillet over medium heat, cook the ground beef, onion, and garlic until the meat is browned and the onion is translucent. Drain any excess fat.

      In a large mixing bowl, combine the diced potatoes, cream of mushroom soup, milk, paprika, salt, pepper, and thyme. Mix well until all ingredients are incorporated.

        Add the cooked meat mixture to the bowl. If using, stir in the frozen mixed vegetables. Mix until all ingredients are well combined.

          Transfer the mixture to a greased 9x13 inch baking dish, spreading it evenly.

            Cover the dish with aluminum foil and bake in the preheated oven for 40 minutes.

              Remove the foil and sprinkle the shredded cheddar cheese over the top. Return to the oven and bake for an additional 15 minutes, or until the cheese is bubbly and the potatoes are tender.

                Once cooked, let the casserole sit for about 5 minutes before serving. Garnish with fresh parsley.
