Easy Mediterranean Chicken Orzo

Ingredients
  

1 lb boneless, skinless chicken breasts

1 cup orzo pasta

2 cups low-sodium chicken broth

1 red bell pepper, diced

1 medium zucchini, diced

1/2 cup cherry tomatoes, halved

1/2 cup Kalamata olives, pitted and sliced

1/4 cup crumbled feta cheese

3 cloves garlic, minced

2 tsp dried oregano

1 tsp paprika

Salt and pepper, to taste

2 tbsp olive oil

Fresh parsley, chopped, for garnish

Instructions
 

Prepare the Chicken: Season the chicken breasts with salt, pepper, oregano, and paprika. In a large skillet, heat the olive oil over medium heat and add the seasoned chicken. Cook for about 6-7 minutes on each side, or until the chicken is cooked through and has a nice golden brown color. Remove from the skillet and let it rest.

    Cook the Orzo: In the same skillet, add garlic and sauté for about 30 seconds until fragrant. Add the diced red bell pepper and zucchini, cooking for 3-4 minutes until they begin to soften.

      Combine Ingredients: Pour in the chicken broth and bring to a gentle boil. Stir in the orzo and cook according to package instructions, usually about 8-10 minutes. Add halved cherry tomatoes and Kalamata olives in the last 3 minutes of cooking.

        Finishing Touches: While the orzo is cooking, slice the cooked chicken into strips. Once the orzo is tender, stir in the feta cheese, and adjust seasoning with more salt and pepper if needed.

          Plating: Add the sliced chicken on top of the orzo mixture, garnish with chopped fresh parsley, and serve hot.
