Ingredients

2 cups shredded coconut (sweetened or unsweetened, as preferred)

1 cup cream cheese, softened

1/2 cup powdered sugar

1 teaspoon vanilla extract

1/4 cup chopped nuts (almonds or walnuts, optional)

1/2 cup chocolate chips (dark or milk chocolate)

1 tablespoon coconut oil (for melting chocolate)

Instructions

Mix the Base: In a large mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Stir until the mixture is smooth and well incorporated.

Add Coconut: Gradually fold in the shredded coconut, ensuring that it is evenly distributed. If you’re using chopped nuts, mix them in at this step.

Shape the Balls: Take about a tablespoon of the mixture and roll it into a ball shape with your hands. Place each ball on a parchment-lined baking sheet. Continue until all mixture is formed into balls.

Chill: Place the baking sheet in the refrigerator for about 30 minutes, or until the coconut balls firm up.

Melt Chocolate: While the balls are chilling, melt the chocolate chips together with the coconut oil in a microwave-safe bowl. Heat in 30-second intervals, stirring in between, until the mixture is smooth.

Coat the Balls: Once the coconut balls have firmed up, dip each one into the melted chocolate to fully coat. Allow excess chocolate to drip off before placing them back on the parchment-lined sheet.

Final Chill: Return the chocolate-coated coconut cream balls to the refrigerator for an additional 15-20 minutes, or until the chocolate is set.

Serve and Enjoy: Once set, these coconut cream balls are ready to serve! Chill leftovers for a refreshing treat later.
