1 cup grated carrots (about 2 medium carrots)

1/2 cup applesauce (unsweetened)

1/3 cup honey or maple syrup

1/4 cup vegetable oil (or melted coconut oil)

2 large eggs

1 teaspoon vanilla extract

1 teaspoon baking powder

1/2 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon salt

1/2 cup crushed pineapple (drained well)

1/4 cup raisins or dried cranberries (optional)

1/4 cup chopped walnuts or pecans (optional)

Preheat Oven: Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan or line it with parchment paper.

    Prepare Dry Ingredients: In a mixing bowl, combine the rolled oats, baking powder, baking soda, cinnamon, nutmeg, and salt. Mix well.

      Mix Wet Ingredients: In another large bowl, whisk together the eggs, honey (or maple syrup), applesauce, vegetable oil, and vanilla extract until fully combined.

        Combine Mixtures: Gradually add the dry ingredients into the wet mixture, stirring gently just until incorporated. Be careful not to overmix.

          Fold in Carrots and Extras: Fold in the grated carrots, crushed pineapple, and raisins (if using). If you like a bit of crunch, you can also add the nuts at this stage.

            Transfer to Pan: Pour the batter into the prepared cake pan, spreading it evenly with a spatula.
