Easy One-Pan Lemon Chicken & Veggies

4 boneless, skinless chicken thighs (or breasts)

2 tablespoons olive oil

2 teaspoons Italian seasoning

1 teaspoon garlic powder

Salt and pepper, to taste

1 medium zucchini, sliced into half-moons

1 red bell pepper, diced

1 cup cherry tomatoes, halved

1 lemon (zested and juiced)

1 tablespoon fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Season the Chicken: In a bowl, combine olive oil, Italian seasoning, garlic powder, salt, and pepper. Add the chicken and ensure each piece is well coated in the seasoning mixture.

      Sear the Chicken: In a large oven-proof skillet, heat a little oil over medium-high heat. Add the chicken thighs or breasts and sear for about 4-5 minutes per side until golden brown. Remove the chicken from the skillet and set aside.

        Prepare the Veggies: In the same skillet, add the zucchini, red bell pepper, and cherry tomatoes. Toss the veggies in any remaining seasoning and sauté for about 3-4 minutes until slightly tender.

          Combine & Bake: Return the chicken to the skillet on top of the veggies. Drizzle the lemon juice and sprinkle the lemon zest over everything.

            Oven Time: Transfer the skillet to the preheated oven and bake for 20-25 minutes or until the chicken is cooked through (internal temperature should reach 165°F or 74°C).
