Ingredients

1 cup all-purpose flour

1/2 cup unsalted butter, softened

1/4 cup granulated sugar

1/4 teaspoon salt

1 cup packed brown sugar

1/4 cup corn syrup

2 large eggs, beaten

1 teaspoon vanilla extract

1 cup pecans, chopped

1/2 teaspoon ground cinnamon (optional)

1/4 teaspoon nutmeg (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper, leaving some overhang to make removing the bars easier later.

Make the Crust: In a medium bowl, mix together the flour, softened butter, granulated sugar, and salt until a crumbly dough forms. Press the dough evenly into the bottom of the prepared baking pan.

Bake the Crust: Bake the crust in the preheated oven for about 15 minutes, or until it is lightly golden brown. Remove from the oven and set aside to cool slightly.

Prepare the Filling: In a large mixing bowl, combine the brown sugar, corn syrup, beaten eggs, vanilla extract, and cinnamon/nutmeg (if using). Stir until the mixture is well blended.

Add Pecans: Fold in the chopped pecans, ensuring that they are evenly distributed throughout the filling.

Combine and Bake: Pour the pecan mixture over the crust, spreading it evenly. Bake for an additional 25-30 minutes, or until the filling is set and bubbly.

Cool and Cut: Allow the bars to cool in the pan on a wire rack for at least 30 minutes. Once cooled, lift the bars out using the parchment overhang and cut them into squares.

Serve: Enjoy your delicious pecan pie bars on their own or with a dollop of whipped cream or a scoop of vanilla ice cream!
