Ingredients

For the Topping:

1 cup pecan halves

½ cup unsalted butter

1 cup brown sugar

¼ cup corn syrup

¼ teaspoon salt

For the Cake:

1 and ½ cups all-purpose flour

1 cup granulated sugar

2 teaspoons baking powder

½ teaspoon baking soda

½ teaspoon salt

½ cup unsalted butter, softened

1 cup buttermilk (or milk with 1 tablespoon lemon juice)

3 large eggs

1 teaspoon vanilla extract

Instructions

Prepare the Topping:

    - Preheat your oven to 350°F (175°C).

      - In a medium saucepan over medium heat, melt the butter. Stir in the brown sugar, corn syrup, and salt until fully combined and smooth.

        - Fold in the pecan halves, ensuring they are well-coated with the caramel mixture.

          - Pour the pecan mixture into a greased 9-inch round cake pan and spread evenly. Set aside.

            Make the Cake Batter:

              - In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, baking soda, and salt.

                - Add the softened butter and mix until sandy in texture.

                  - In a separate bowl, combine the buttermilk, eggs, and vanilla extract. Gradually add this mixture to the dry ingredients, beating on medium speed until the batter is smooth and well-combined.

                    Assemble the Cake:

                      - Carefully pour the batter over the caramelized pecan topping in the cake pan, smoothing the top evenly.

                        Bake:

                          - Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

                            - Remove from the oven and let it cool for about 10 minutes.

                              Invert the Cake:

                                - To serve, run a knife around the edges of the cake pan to loosen. Place a serving plate upside down over the cake pan and flip quickly to turn the cake onto the plate, so the pecans are on top.

                                  Serve:

                                    - Allow the cake to cool slightly before slicing. Serve warm or at room temperature, and enjoy the gooey caramelized pecan topping!
