Easy Potato Noodles

2 large russet potatoes

1 cup all-purpose flour (plus extra for dusting)

1 large egg

1 teaspoon salt

1 tablespoon olive oil (optional)

Freshly ground black pepper (to taste)

Instructions
 

Prepare the Potatoes: Wash and peel the russet potatoes. Cut them into chunks and boil in salted water until fork-tender, about 15-20 minutes. Drain and let cool slightly.

    Mash the Potatoes: In a mixing bowl, mash the boiled potatoes until smooth, ensuring there are no lumps. Allow the potatoes to cool completely.

      Make the Dough: Add the flour, egg, salt, and olive oil (if using) to the mashed potatoes. Mix until a soft dough forms. If the dough is too sticky, add a little more flour as needed.

        Roll the Dough: Dust a clean surface with flour. Divide the dough into quarters to make it easier to handle. Roll one quarter into a long strip, about 1/4 inch thick, ensuring it stays floured to prevent sticking. Repeat with the remaining dough.

          Cut into Noodles: Use a knife or a pasta cutter to cut the rolled dough into noodle shapes of your desired width (about 1/2 inch for fettuccine-style noodles). Lightly dust the cut noodles with flour to prevent sticking.

            Cook the Noodles: Bring a large pot of salted water to a boil. Add the potato noodles and cook for 2-3 minutes until they float to the surface. Drain the noodles in a colander.

              Serve: Toss the cooked noodles with a drizzle of olive oil, freshly ground black pepper, or your favorite sauce. They pair beautifully with marinara, alfredo, or a simple garlic and herb sauce.
