2 large russet potatoes

1 cup all-purpose flour (plus extra for dusting)

1 large egg

1 teaspoon salt

1 tablespoon olive oil

1 teaspoon garlic powder (optional)

Fresh herbs (like parsley or basil, for garnish)

Grated parmesan cheese (for serving)

Instructions
 

Prepare the Potatoes: Peel the potatoes and cut them into quarters. Boil them in a large pot of salted water until tender, about 15-20 minutes. Drain and allow to cool for a few minutes.

    Make the Dough: Once the potatoes are cool enough to handle, mash them until smooth. In a large mixing bowl, combine the mashed potatoes with flour, egg, salt, and olive oil. Mix until a dough forms. If the dough is too sticky, add more flour a tablespoon at a time.

      Knead the Dough: Transfer the dough to a floured surface and knead it gently for about 2-3 minutes until smooth. Divide the dough into 4 equal portions.

        Roll Out the Noodles: Take one portion of dough and roll it out into a thin sheet (about 1/8 inch thick) using a rolling pin. Use a knife or a pizza cutter to cut the sheet into strips or desired shapes for your noodles.

          Cook the Noodles: Bring a large pot of salted water to a boil. Add the cut noodles and cook for 3-5 minutes until they float to the surface and are lightly tender. Drain and rinse lightly under cold water to stop the cooking process.

            Serve: In a skillet, heat a tablespoon of olive oil over medium heat. Add the cooked noodles and sauté for 2-3 minutes until they are slightly crisp. If desired, sprinkle with garlic powder while cooking.

              Garnish and Enjoy: Serve the potato noodles hot, garnished with fresh herbs and a generous sprinkle of grated parmesan cheese.
