Ingredients
  

1 cup unsalted butter, softened

1 cup brown sugar, packed

1/2 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

2 1/4 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 cup caramel bits

Sea salt for sprinkling

Instructions
 

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar using an electric mixer until the mixture is light and fluffy.

      Add the egg and vanilla extract to the mixture and continue mixing until combined.

        In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, mixing until just combined.

          Fold in the caramel bits until evenly distributed in the dough.

            Using a cookie scoop or tablespoon, drop rounded dough balls onto the prepared baking sheet, spacing them about 2 inches apart.

              Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden but the centers are still soft.

                Remove from the oven and immediately sprinkle a pinch of sea salt on top of each cookie while they are still warm.

                  Let the cookies cool on the baking sheet for 5 minutes before transferring them to wire racks to cool completely.
