Ingredients
  

1 lb (450g) flank steak, thinly sliced against the grain

2 cups broccoli florets (fresh or frozen)

1/4 cup soy sauce (low sodium recommended)

1/4 cup beef broth

2 tablespoons brown sugar

1 tablespoon cornstarch

1 tablespoon sesame oil

2 garlic cloves, minced

1-inch piece of ginger, minced

1 tablespoon rice vinegar

2 tablespoons oil (for searing)

Cooked rice or quinoa, for serving

Sesame seeds and sliced green onions, for garnish

Instructions
 

Prepare the Beef: In a large bowl, combine the sliced flank steak, soy sauce, beef broth, brown sugar, cornstarch, sesame oil, minced garlic, minced ginger, and rice vinegar. Mix well and let marinate for at least 15 minutes.

    Sear the Beef: In a skillet over medium-high heat, add the oil. Once hot, add the marinated beef in batches and sear for 2-3 minutes until browned (not fully cooked). Transfer the beef to the slow cooker.

      Add Broccoli: Place the broccoli florets on top of the beef in the slow cooker.

        Cook: Cover the slow cooker and set it to low for 4-5 hours or high for 2-3 hours, until the beef is tender and the broccoli is cooked.

          Thicken the Sauce (Optional): For a thicker sauce, mix 1 tablespoon of cornstarch with 2 tablespoons of water. Stir this mixture into the slow cooker during the last 30 minutes of cooking.

            Serve: Once cooked, serve the beef and broccoli over cooked rice or quinoa. Garnish with sesame seeds and sliced green onions for added color and flavor.
