EASY STUFFED BELL PEPPERS

Ingredients
  

4 medium bell peppers (any color)

1 cup cooked quinoa or rice

1 cup black beans, drained and rinsed

1 cup corn kernels (fresh, frozen, or canned)

1 cup diced tomatoes (canned or fresh)

1 teaspoon ground cumin

1 teaspoon chili powder

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 cup shredded cheese (cheddar or mozzarella)

1 tablespoon olive oil

Salt and pepper to taste

Fresh cilantro (for garnish, optional)

Lime wedges (for serving, optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Peppers: Slice the tops off the bell peppers and gently remove the seeds and membranes. Lightly brush the outside with olive oil and place them upright in a baking dish.

      Make the Filling: In a large mixing bowl, combine the cooked quinoa or rice, black beans, corn, diced tomatoes, cumin, chili powder, garlic powder, onion powder, half of the shredded cheese, salt, and pepper. Mix until all ingredients are well incorporated.

        Stuff the Peppers: Spoon the filling mixture into each bell pepper, pressing down gently to pack the filling tightly. Leave a little room at the top for the cheese.

          Add Cheese: Sprinkle the remaining shredded cheese on top of each stuffed pepper.

            Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes until the peppers are tender and the cheese is melted and bubbly.

              Garnish and Serve: Remove from the oven and let cool for a couple of minutes. Garnish with fresh cilantro, if desired. Serve with lime wedges on the side for an extra zing.
