4 boneless, skinless chicken breasts

2 ripe mangoes, diced

1 red bell pepper, diced

1 small red onion, finely chopped

1 jalapeño, seeded and minced (optional for heat)

1/4 cup fresh cilantro, chopped

Juice of 2 limes

1 tsp garlic powder

1 tsp cumin

Salt and pepper to taste

1 cup low-sodium chicken broth

Instructions
 

Prepare the Salsa: In a medium bowl, combine the diced mangoes, red bell pepper, red onion, jalapeño (if using), and cilantro. Drizzle with lime juice, and season with salt and pepper. Gently toss to mix and set aside.

    Season the Chicken: Season both sides of the chicken breasts with garlic powder, cumin, salt, and pepper.

      Layer in Crockpot: Place the seasoned chicken breasts in the bottom of the crockpot. Pour the chicken broth over the chicken to keep it moist while cooking.

        Add Salsa: Spoon the prepared mango salsa mixture over the chicken breasts, spreading it evenly.

          Cook: Cover the crockpot with its lid and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is cooked thoroughly and easily shreds with a fork.

            Serve: Once cooked, shred the chicken directly in the crockpot with two forks and mix it with the salsa. Serve on a bed of rice, in tortillas, or over a salad for a full meal!
